Eat to Beat the Heat – The Link Between Food and Climate Change

The League of Women Voters of Henderson County and the Hendersonville Community Co-op
invite the public to a lunch-and-learn program, Eat to Beat the Heat – The Link Between Food
and Climate Change, on Wednesday, September 3, 2025 from 11:30 am-1:30 pm at First
Congregational Church, 1735 5th Ave W. in Hendersonville. The program will address how a
more plant-based diet can help the environment, and provide fundamental and practical
information to help attendees realize that their dietary choices, food sources, and food waste
disposal practices contribute significantly to their personal carbon footprints. Attendees are
encouraged to bring a sandwich, but will also be served samples of vegan salads prepared by the
Hendersonville Community Co-op, the program’s co-sponsor.

Ted Volskay has been an environmental consultant for over 30 years. He is currently consulting
for the US Air Force on matters pertaining to remediation of contaminated soil and groundwater
at BRAC (Base Realignment and Closure) bases. He received his MS in Environmental
Engineering from Clemson and recently received a masters degree in Sustainable Water
Management from the Patel College of Global Sustainability (https://www.usf.edu/pcgs/) at the
University of South Florida.
